Ingredients 

Ingredients: For the Batter:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract

For the Filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract

For the Topping:

  • Fresh berries or fruit of your choice
  • Powdered sugar, for dusting

Instructions 

  1. In a mixing bowl, whisk together the flour, sugar, and salt for the batter. Set aside.
  2. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Whisk until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms. Let the batter rest for 10 minutes.
  4. In a separate bowl, prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, lemon zest, and vanilla extract until smooth and creamy. Set aside.
  5. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or cooking spray.
  6. Pour 1/4 cup of the batter into the pan and swirl it around to form a thin, even layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip the blintz and cook for an additional 30 seconds. Repeat this process with the remaining batter.
  7. To assemble, spread about 2 tablespoons of the cream cheese filling onto each blintz and fold the sides over the filling. Roll it up like a burrito and place it seam-side down on a serving platter
  8. Garnish the blintzes with fresh berries or fruit of your choice and dust with powdered sugar.
  9. Serve the Cream Cheese Blintzes warm and enjoy!
