Keto Chicken Stir-Fry
Ingredients:
1.5lbs chicken thighs, deboned and cut into slices
1tsp ginger, peeled and grated
2 garlic cloves minced
1/4 cup soy sauce
1 TBP apple cider vinegar
Marinade chicken in garlic, ginger, soy sauce, and vinegar
Ingredients:
1+1/2 TBS Avocado Oil
1 med onion, chopped
1/2 medium red bell pepper, sliced
7oz broccoli
Add half of the avocado oil in a pan or a wok over high heat.
Once hot, add the onion and cook for 1-2 minutes or until soft.
Then add the red bell pepper and broccoli
Once broccoli is cooked, but still crisp, remove vegetables from the pan and place in a bowl.
Instructions:
Drain the chicken from the marinade
(Keeping the marinade to add later.)

Add the remaining avocado oil to your pan or wok.
Once hot, add the chicken.
Cook the chicken over high heat until it is completely cooked through, about 4 to 6 minutes.
Once the chicken is cooked, put all remaining ingredients into the pan. Including the pre-cooked vegetables and the marinade.
Ingredients to add besides the pre-cooked vegetables:
3oz cremini mushrooms, sliced
2tsp sesame oil
1/2 tsp red pepper flakes
Cook for 3 to 4 minutes more, until the mushrooms are al dente and the sauce has reduced.
Serve hot and enjoy!
