Ingredients
6 Chicken thighs – We are using boneless skinless chicken thighs, as they are the most tender and juicy in soups and stews.
Veggies –
Mushrooms
4 Cups fresh Baby spinach
4 Cups fresh Baby spinach
1 Onion, chopped
Seasonings –
1 Tbsp Paprika
salt to taste
pepper to taste
1 Tsp Dried thyme
3 Tbsp Chopped garlic
1 lemon, juiced
1/2 cup Heavy Cream
1.5 Cups Chicken broth
1/4 Cup Parmesan cheese
4 Tbsp Butter
Directions
Cut the chicken into bite-size pieces
season with
Salt
Pepper
Paprika
Heat butter on medium high in a soup pot
Sear the chicken all over for 10 minutes.
Plate it out and discard the excess juices.
Heat more butter
Sauté onion till it’s soft and about to change colour.
Add in mushrooms
Sauté till they are soft.
Stir in garlic
Sauté for a couple of minutes.
Add in chicken broth with
Cream
Lemon juice
Cook for a minute.
Stir in
Parmesan cheese
Thyme.
Add chicken back into the soup pot and let it simmer for 20-25 minutes.
Add in spinach and simmer till the spinach starts wilting.
Taste and adjust the seasonings like salt and lemon juice.
