Ingredients:
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 bell peppers, diced
2 jalapenos, diced
2 cups cooked chicken, shredded
4 cups chicken broth
1 can diced tomatoes
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup cilantro, chopped
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, bell peppers, and jalapenos and cook until softened, about 5 minutes.
3. Add the chicken, chicken broth, tomatoes, cumin, chili powder, oregano, paprika, salt, and pepper.
4. Bring to a boil, then reduce the heat and simmer for 15 minutes.
5. Add the cilantro and simmer for an additional 5 minutes.
6. Serve hot with your favorite toppings.
